Signature English Muffins
English muffins are what started it all! One day I wanted Eggs Benedict, and went to the store in search of English muffins. What I found didn't make me happy, so I spent a year perfecting my own!
They take some time to make: They undergo an initial rise and then another 24 hour rise in the refrigerator after shaping.
They are meant to be toasted, and are grilled accordingly (that's right, English muffins are grilled, not baked). So, you might find them a little too chewy if you don't toast them.
I think that these are the best muffins in the known universe, they are truly Texas-sized!
